Spruce’s Park City Restaurant at Waldorf Astoria Hits the Mark – Best Restaurant in Park City?

As soon as we finished our appetizers, our main dishes were ready. Kevin ordered the special that Maggie recommended, a Honey Lacquered Duck Breast served with plum gastrique and topped with cinnamon foie gras. The gorgeous mahogany-colored duck was rich with flavor with the sweetness of the honey perfectly balanced the contrasting hint of spice on the buttery foie gras.  The outside of each duck medallion was perfectly crusted with a sweet honey glaze. For myself, I had my heart set on the Grilled Spiced Albacore entree with padron peppers and panisse drizzle, with a warm basil vinaigrette. The albacore came out superbly seared, leaving most of the fish fairly rare. The dish was very pleasing, with the padron peppers complimenting the taste of the fish incredibly well.  It’s second-to-none in Park City. Once we were finished with our entrees, Kevin and I needed a bit of time to digest in order to make room for dessert!

When Maggie came back to the table to remove our cleanly licked plates, she offered us a variety of dessert options and a wide range of specialty teas and coffees. Kevin and I ordered some coffee and decided to try the recommended Peach Melba.  The Peace Melba is served with vanilla poached peaches, raspberries, and a delectable cream sauce that just made the entire ensemble over-the-top delicious! We had NO problem devouring this dessert, which was also prepared table-side. This is a great dessert to share and we enjoyed watching the ingredients being poured over the vanilla ice-cream as we waited with anticipation to dive in. After finishing our dessert, the Manager came over with a few gelatin fruit squares and some banana chocolate truffles just to finish things off. While we were both full to the brim, we made room for these tiny little masterpieces. What a way to top off the evening!

The timeliness and incredible service from Spruce’s staff is truly remarkable. There was not one moment where Kevin and I felt rushed, annoyed, or neglected. The servers never came off as arrogant as they carefully described in full detail the delicacies on the menu. For a restaurant that serves everything from Duck Liver Mousse and Sweet Bread to Truffled Rabbit Rillette and Hot and Cold Foie Gras, Spruce goes out of it’s way to make it’s guest feel at home, no matter who you are.

Mark Sullivan - Spruce Restaurant, Park City, UtahKevin and I had the wonderful opportunity to meet the full staff. The Sommelier came over and introduced herself while offering to pair our meal with a few different wines. The Trimbach Alsace Pinot  Blanc that she paired with our appetizers was a match made in heaven. Chef Mark Sullivan, Executive Chef and Partner of the Spruce in San Francisco, also came out to introduce himself. Sullivan’s intuition and true passion for food was obvious in every detail, from the entire restaurant’s layout to how each elaborate dish was styled. Mark expressed to us that his vision for Spruce is to be a place for Park City locals to feel at home, for those looking to just enjoy a burger at the bar during apres ski, or to help mark a special occasion.

Overall, Kevin and I found our entire evening to be flawless. Everything from its contemporary charm to its down-right unbeatable cuisine was impressive. We have no doubts that Spruce Restaurant is Park City’s best restaurant and and will quickly find itself in the hearts of all Parkites. Thank you Spruce for the wonderful evening and we can’t wait to come back. If you haven’t been to Spruce yet, you are missing out on one of the best dining experience you can have in Utah.
